Breakfast Crouttatas

Braciole

Ingredients:

8 eggs
1 c. of milk
3/4 c. crumbled sausage, bacon or diced ham
1 c. Rothbury Farms croutons
3/4 c. shredded cheddar cheese
3/4 c. assorted diced vegetables such as onion, mushrooms, peppers (optional)
Salt & pepper to taste
Spray cooking oil


Directions:

Spray two muffin tins with cooking oil or line with paper cups

Drop approximately 5 croutons in the bottom of each cup

Sprinkle each cup evenly with meat and vegetables

Sprinkle each cup with approximately 1 T. cheddar cheese

Whisk eggs, milk and salt & pepper

Slowly pour egg mixture over filled muffin cups. Allow mixture to soak in and top off.  

Muffin tins can be covered and refrigerated overnight, or allow muffin tins to sit, refrigerated for a minimum of 1/2 hour before baking.

Bake at 350 degrees for 20 minutes

Sprinkle with remaining cheddar cheese
